So a couple of weeks ago I made a batch of brownies from Gwyneth Paltrows cookbook, My fathers Daughter. Not only were they super easy & delicious, they are also rather good for you too – well as good for you as they can be without tasting like soil! And did I mention that they are wheat & refined sugar free! (you could also eliminate the dairy by using carob chips if you were so inclined)

I promised a few people that I would post the recipe, so here it is….bake your hearts out!


  • 2 cups white spelt flour
  • 1 cup good quality cocoa powder
  • 1 1/2 tablespoons baking powder
  • 1 cup maple syrup
  • 1/2 cup vegetable oil (I used coconut oil)
  • 1/2 cup brown rice syrup (I used more maple syrup as it was what I had at hand, but you could also use light agave nectar)
  • 1/2 cup strong brewed coffee (didn’t add this as not a coffee fan, just substituted with water)
  • 1/2 cup soy milk
  • 1 tablespoon vanilla extract
  • 1 cup semi sweet chocolate chips, divided (I just used milk as TW requested them, plus the coco I used is super dark)


Heat oven to 180′c. Sift flour, cocoa powder, baking powder and a pinch of salt into a bowl. Whisk maple syrup, oil, brown rice syrup, coffee, soy-milk and vanilla in another bowl. Fold wet ingredients into dry ingredients. Pour half the batter into a greased 9″ x 11″ baking dish; top with half the chips. Pour remaining batter into dish and top with remaining chips. Bake until knife comes out with crumbs adhering to it, 30 minutes. Let cool.

please note that every oven can differ, so be sure to check these at regular intervals as you don’t want to overcook them.

Now I used mostly organic ingredients, but just use what you can get your hands on…my motto is just do what you can.
